Eggless Papaya Chocolate Chip Muffins Recipe | Vegan Papaya Muffins Recipe
Papaya Chocolate Chip Muffin, eggless, butterless papaya chocolate chips muffins makes excellent tea time snack or a quick breakfast or even dessert. This Valentine Day is around the corner I thought of sharing this simple yet delicious spiced muffin recipe and a great way to use papaya, it's specially good for the people who always end up having papaya for days without knowing what to do with it as lot of people don't eat papaya!
If you don't like papapya or anyone in your family don't like to eat papaya then making this papaya muffin is great idea there's no papaya smell thanks for the flavorful lemon zest. Cinnamon powder adds good flavor to these muffins and along wih chocolate chips these are just yummy to eat, soft, moist and delicious is what we should describe these muffins as.
For trial you can halve the recipe and make small batch for a start and see how you liked them though I think it's difficult not to like this delicious muffins. Also I made this Vegan Muffins so no egg, no butter and no dairy product. Don't think the muffin will be dry since there's no egg or milk, these muffins are perfectly moist due to papaya puree.
I have used flax seeds as egg re-placer in this muffins too like in the dates cake recipe and flax seeds works as magic again I am so happy with the result. But if you don't mind adding eggs then go ahead and add 2 eggs for below recipe, beat the egg, sugar first then add papaya puree, oil and follow rest of procedure same, don't add flax seeds in case of using egg of course :)
If you wish instead of chocolate chip you can add some chopped nuts to have crunch, use any nuts of your choice or add both choco chips & nuts too it works either way. Do this Valentine try something healthy and delicious baking, do share your feedback if you try this recipe.

Eggless Papaya Chocolate Chips Muffin | Vegan Papaya Choco Chip Muffins Recipe

Ingredients:
- 2 Cups - All Purpose Flour/Plain Flour/Maida
- 2 tsp - Baking Powder
- 1/2 tsp - Baking Soda
- 1/2 tsp - Cinnamon Powder
- 1/2 tsp - Salt
- 2 1/2 Cups - Chopped Papaya
- 1/2 Cup - Brown Sugar
- 1/2 Cup - White Sugar
- 1/2 Cup - Oil (I used Saffola)
- 2 tbsp - Flax Seeds
- 2 tsp - Lemon or Orange Zest
- 2 tbsp - Chocolate Chips
Method:
- Preheat oven to 180C (for 10 mins), meanwhile coarsely grind flax seeds and soak in 4 tbsp of water, keep aside for 10 mins or until needed.
- Sieve all the dry ingredients like all purpose flour (maida), baking soda, baking powder, salt, cinnamon powder and keep aside.
- Peel, chop and puree papaya pieces in a mixer or blender, lovely color isn't it?
- In a mixing bowl add papaya puree, brown & white sugar and mix well until sugar dissolves. Now add oil and mix again to combine. Add the soaked flax seeds, lemon zest and mix well to combine.
- Add 1/3 of flour and mix to combine well without any lumps, do this again in 2-3 batches for remaining flour.
- Mix chocolate chip (keep few for adding on top later) with 2 tbsp of flour and add to prepare batter, mix gently. Line muffn tray with muffin liners and fill 3/4 of muffin liners with batter, add few chocolate chips on top. Bake for 20-25 mins or until a tooth pick inserted in center comes out clean, mine got baked in 18 mins so after 15 mins check the muffin if not done then check after 5 mins, do this until you get clean tooth pick.
- Once the cake is baked, cool on a wire rack for 5 mins, remove muffins from tray and allow it to cool completely on wire rack. I baked all the muffins together if you are bake in batches too, number of muffin we get also depends on the size of muffin liner you use.
Serve it as snack along with tea or coffee or have it as dessert, option is yours. We love to have it as both :)
- Have all the ingredients at room temperature.
- Don't miss the lemon zest as it's adds wonderful flavor the muffins also help to reduce papaya smell, we can also use orange zest.
- You can make the cake with half of maida and half wheat flour.
- Number of muffin we get also depends on the size of muffin liner you use.
