Maida Burfi, or Maida Cake, plain flour fudge is very easy sweet recipe made with minimal ingredients that we can always find in our pantry. These Maida Burfi makes excellent diwali sweet and specially will be loved by kids for sure. In South India maida sweets are very popular comes in various shapes and color, infact its always so pretty to look at all colorful sweets in sweet shops on those days when dry fruits and North Indian sweets were not very famous.

This maida burfi or cake is very easy to make we just need to take care of the sugar syrup consistency and we are done, read the recipe carefully before you try to make the process easy.
You can add any food color or even kesar/saffron soaked in water if you don't want to use food color, add nuts of your choice to decorate and make this maida burfi look more pretty, I just wanted this look as this is from the childhood memories, maida burfi used to come like this at home, so I kept it simple. Ingredients:
- 1/2 Cup - Maida/All Purpose Flour/Plain Flour
- 1 Cup - Sugar
- 1/2 Cup - Water
- 1/4 Cup - Melted Ghee
- A Pinch - Cardamom Powder
- A Pinch - Food Color (I used red orange)
- 1 tbsp - Finely Chopped Cashewnuts
Method:
- Heat ghee in a pan or wok, once almost smoking hot, change flame to slow and add maida, fry for a minute until it becomes wet sand texture, off flame and keep aside. Grease a plate or pan with ghee and keep aside.
- In a pan or wok add sugar, water and cook until sugar dissolves and sugar syrup starts to get thicken, cook until you get 1 string consistency. To check sugar syrup consistency, dip your hand in a bowl of water (to avoid getting burn) and touch sugar syrup from ladle or spoon that you are using between your fore finger and thumb, when you separate your fingers you can see one string forming, if the string breaks then it's not ready yet cook for another min in slow flame and repeat the test. You can also test consistency with dropping few drops of syrup in a small bowl of water, if the syrup doesn't get dissolve immediately it's ready.
- Add cardamom powder, food color mix well, add cashew nuts, fried maida and OFF flame (yes you have to off flame now)
- Start mixing the mixture, break any lumps if getting formed. Keep stirring non-stop until it becomes thick and starts to leave side of pan. It has to be little flowing so once you see it's leaving side of pan it's done.
- Pour this mixture into the greased pan and spread with the help of spatula, use a greased zip lock bag to smooth surface, it will be hot so be careful. Allow to cool the burfi, once it's comes to slight warm stage, cut into square or desire shape and keep aside. Once burfi completely cools down, transfer to air tight container.
Our easy maida burfi is ready, stays good for over a week on room temperature.
- Sugar syup consistency is important in this recipe so make sure you don't miss that.
- The mixture gets thicken fast so once it's thicken immediately pour in pan and set it.
- You can use any nuts of your choice, you can also add the finely chopped nuts on top of mixture once we pour in pan and then level with zip lock bag to make the burfi look pretty.
- You can use any food color of choice or even avoid food color to have dull white burfi. I use very small amount of food color that's why red orange became pink :)
- You can replace cardamom powder with any essence or extract of choice.
