Okra has high fiber, vitamin C and good source of calcium and potassium, it's also high in antioxidants making it nutritious vegetable.
How to Choose Okra
- Look for fresh, small pods around 3-5 inches in length (larger pods tends to be tough and stringy). Choose those are firm, bright in color and unblemished. Green is most common, but you may encounter red or deep burgundy varieties.
- Indian method choosing tender okra is you hold okra where the pod in your four curved fingers with the pointed end facing the ceiling. Snap the pointed end over with your thumb. If the end snaps off, it is fresh and will be tasty. If it just bends and retracts it will be very fibrous and won't cook well.
