Potato fry (stir fry), aloo sabzi, urulai kilangu poriyal whatever we may call it this has to be one of the popular, easy, quick and delicious potato recipe. Potato fry is something that I make very often for a simple reason that it goes well with almost every thing whether it's roti, paratha or rice with dal, rasam, sambar and also that it's so easy and quick to prepare. It's taste good with everything making it great combo and perfect for those lunch boxes.
As most of the recipes which I make very often didn't make it to blog cause every time I think next time I will take pictures and this happened with this simple potato poriyal too until now, I made this for lunch along with tomato dal, mor kuzhambu, neer mor(not in picture) for a full South Indian meal and decide to finally take pictures. Potato (Aloo) Fry Recipe

Ingredients:
- 4 Medium - Potatoes
- 1 tbs - Oil
- 1/2 tsp - Cumin Seeds
- 1/2 tsp - Mustard Seeds
- 1 tsp - Sambar Powder
- 1/4 tsp - Turmeric Powder
- 1/2 tsp - Red Chili Powder
- To Taste - Salt
Method:
- Wash, peel potatoes and dice in small pieces, rinse again 2-3 times in water, drain and keep aside.
- In a wok or pan heat oil add mustard, cumin seeds and allow to splutter. Add potatoes, saute, cover and cook in medium heat until half cooked, stir in intervals.
- Add sambar powder, red chili powder, turmeric powder and salt, mix well, cover and cook for 4-5 minutes or until potato gets cooked fully, do stir in intervals.
- If you don't have sambar powder then replace it 1/2 tsp red chili+1/2 coriander seeds powders.
- You can also add minced garlic, curry leaves before adding potato for added flavors.
