Bhindi Raita or Vendakka Thayir Pachadi or Okra Spiced Yogurt Dip is one of easy raita or accompaniment recipe perfect with Biryani, Pulao or Variety Rice. Vendakkai pachadi or bhindi raita is good variations from usual raita recipe with crispy fried okra/bhindi, chilled yogurt and with tempering or tadka it's taste wonderful. Not only rice but we can also pair this raita with roti or paratha too it goes well with everything.
This bhindi raita I make often and it's one of my favorite raita recipe as along with taste it also looks so pretty right? Few people deep fry bhindi/okra and then add to curd/yogurt but I normally don't deep fry bhindi but rather stir fry it well so bhindi becomes crisp and taste like fried bhindi too.
This bhindi raita we can make when we don't want to do so much of cooking just make some one pot meal like biryani in cooker or masaledaar pulao like soya briyani, soya chunks pulao, Tindora pulao, tomato rice etc or even with simple pulao like jeera rice, matar pulao or even kashmiri pulao goes well with this bhindi raita. Or if you cooking for party or get-together or festivals curries like Chole Masala, Dum Aloo, Paneer Butter Masala, Tariwale Aloo Matar etc then simple mild and different raita brings change and also balance the meal well.
Or for lunch box, breakfast, lunch or dinner pair this raita with simple or stuffed paratha so you can see there are endless option of what you want this pachadi or raita to pair with but it goes well with just everything.

Ingredients:
- 22 to 25 - Small Okra/Bhindi &
- 2 - Green Chilies
- 2 tsp - Oil
- 1 Cup - Thick Curd/Yogurt/Dahi/Thayir
- To Taste - Salt For Tadka/Tempering
- 1 tsp - Oil
- 1/2 tsp - Cumin Seeds
- 1/2 tsp - Mustard Seeds
- 1 tsp - Urad Dal
- 1 - Dry Red Chili
- 6 to 7 - Curry Leaves
- 3 1/2 Cups - Water
Method:
- Wash, pat dry well and chop okra in small pieces, finely chop green chilies.
- In a pan or wok heat oil add okra, green chili and cook in medium flame until okra becomes cripsy stir regularly.
- To prepare tempering heat oil in a small pan or add cumin, mustard seeds and allow to splutter. ADd urad dal, curry leaves, dry red chili and saute until dal becomes golden brown, off flame.
- In a bowl beat curd (yogurt) add salt, cooked okra and mix well. Add prepared tempering on top.
Easy and yummy raita is ready.
