Jeera rice is something that I make when I ran out of ideas on what to cook or mostly for guests as jeera rice works with any curry or dal and I like to make simple yet flavorful Jeera Pulao to balance it with spiced curry to make every thing is not spicy and heavy. Or I make jeera rice simply when I feel lazy to do any elaborate meal there was a time when every Sunday it use to be jeera rice for lunch along with a curry and/or dal.
Jeera rice is made in few way one is the easy one pot affair with this pressure cooker method or we can do the prep work and cook in rice cooker as I do for matar pulao or just cook in open pan follow the same procedure in any case. Some people make rice first and the do cumin tempering with whole garam masala, onion etc.
I like this pressure cooker version of jeera rice as it's easy, quick and doesn't require much of my attention and meanwhile I can focus on side dish to go along. Do can do few variations with jeera rice like add cashews, raisins, onion etc just get creative or stay along the basic method it's up to you.

Ingredients:
Basmati Rice - 2 Cups
Ghee/Oil - 2 tbsp
Caraway Seeds/Shah Jeera - 1 tsp
Bay Leaf/Tej Patta - 1
Star Anise/Chakri Phool - 1
Cloves/Laung - 3
Mace/Javitri - 1 small pieces
Cinnamon/Dalchini - 1 inch pieces/span>
Salt/Namak - To Taste
Water/Pani - 3 Cups or as required
Method:
1. Wash and soak basmati rice in enough water for 30 minutes, drain water and keep aside. Gather all the whole spices meanwhile.
2. Heat ghee or oil pressure cook add all whole spices and saute until caraway seeds cracks, add rice and saute for 2 minutes gently.
3. Add water, salt mix well. Pressure cook for 2 whistles, once pressure released gently fork rice with a spatula or fork.
Serve hot with dal or any curry of your choice or even a raita also works. I made hara moong dal and potato curry.

Variations
- You can add 1 sliced onion.
- Add cashews for nice crunch.
- If you don't have shah jeera use normal jeera/cumin seeds
