Pasta in tomato sauce and chickpeas salad was Sunday lunch for me and my friend whom visited us last week from India. I was so bored of cooking every time rice, pulav, paratha for him so thought of making pasta instead for a change (perhaps more for myself ;)) One thing is he is quite a picky eater....he don't eat this and that. I really had to be very careful with what I cook.. since now I became the host ! Isn't is so difficult to think of menu for a week including breakfast, lunch and dinner?? I was running out of ideas especially when my refrigerator was empty most of times.
Pasta with Tomato Sauce
Ingredients:
Pasta - 1 cup (appr. 250 gms) - I used shell pasta here
Tomato sauce/pulp - 1/2 cup
Onion - 1 medium
Garlic - 4 pods (grated)
Cauliflower - 1/4 cup (cut in small pieces)
Oliver Oil - 2 tbsp
Parmesan Cheese - 2 tbsp or more
Grounded Black pepper - 1/2 tps
Salt - to taste
Water - 3-4 cups
Method:
1. Boil water and add pasta with 1tbs of oil & little salt.
2. Cook until pasta is done
3. Once pasta is cooked well, strain the pasta and run over cold water.
4. In a pan heat oil, add grated garlic and fry until it turns brown.
5. Add sliced onion and saute until onion turns light brown.
6. Add cauliflower and saute for 5mins. You can add any veggie of your choice or shredded chicken.
7. Add tomato sauce/pulp, salt and grounded pepper now and cook for 4-5mins.
8. Now add boiled pasta; mix well and cook again for 3-4 mins.
9. Server as it is or add cheese.
Next up is Chickpeas Salad...I had this remaining chickpeas after making Chole which I stored in freezer for future use. Here is simple salad.
Chickpeas Salad Recipe
Ingredients:
Chickpeas - 1/2 cup boiled ( or use canned)
Onion - 1 large
Tomato - 1 medium
Herbs - 1 tbsp of any choice ( I used rosemary and kasuri methi)
Garlic - 2 pods crushed
Chilli flakes - 1/2 tps
Salt - to taste
Oliver Oil - 1tbs
Method:
1. In a pan heat oil, add garlic and saute it.
2. Slice half of onion and saute until it gets soft.
3. Chop remaining onion, chop the tomato and divide in two portions.
4. Add one portion of tomato in pan and mix everything
5. Now add chickpeas, herbs, chilli flakes, salt and mix well. Cook for 2-3 mins. Just enough that tomato doesn't get mashed.
6. Before severing mix remaining chopped onion and tomato in the salad.
And here comes the platter
Enjoy the platter.
