Lauki Dal or Dudhi dal is one of those recipes which I prepare when I’m in hurry to finish cooking or don’t want to cook anything or simply cause there is lauki at home. The recipe is simple and easy resulting in delicious dal and the big advantage is you really don’t have to cook any vegetable, without any side dish or sabji also our loyal lauki/dudhi dal will taste just yummy. There are few version of making lauki dal in my home we prepare lauki with various dal and in different ways.
I maximum do toor dal lauki in below mention method with slight variations some times, you have to choose tender bottle gourd to make dal lauki or the dal will not taste nice and also the fresh ones. I personally like to chop bottle gourd in small pieces as I don't like to bite on big pieces but if you wish you can cut them in to chunks too.
You can do follow the same method and use chana or yellow moong dal to make dal lauki too but for chana dal lauki I have a different method which I will post soon. I normally cook dal and bottle gourd separate but you can also cook both together just make sure when you mash the dal the bottle gourd pieces should not get mashed, if you do that carefully it can be done.
This most of the time our Saturday lunch as it's quick and easy, pair up with steamed rice some salad and achar, papad and we are done with a satisfying meal. You can try the same and I guess you will live it too, do share your views on this dal if you try.

Toor Dal Lauki Recipe

Ingredients:
Lauki/Bottle gourd – 1 medium or 3 cups chopped
Toor Dal/Split Pigeon Peas – 1 cup
Onion – 1 medium
Green chilies – 4-5 or to taste
Tomato – 1 big
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Chopped Coriander Leaves - 2 tbsp
Salt - To Taste
For Tadka/Tempering
Oil or Ghee or Butter - 2 tsp
Asafoetida/Hing - A Pinch
Cumin/Jeera Powder - 1 tsp
Minced Garlic - 1 tsp
Method:
1. Wash Dal and soak in water until required. Peel bottle guard and cut in small cubes. Remove the seeds if wished or too many seeds.
2. Pressure cook dal and bottle guard together with 1/4 tsp of turmeric powder and enough water for 3 whistles. Once pressure released mash well and keep aside.
3. Meanwhile chop onion, tomato, green chilli and coriander leaves.
4. In pan or wok heat oil/ghee, hing, add cumin seeds, garlic and saute until garlic becomes golden brown.
5. Add onion, green chilli and saute until onion becomes soft.
6. Add redchill, remaining turmeric powder and saute for minute. Add chopped tomato and cook until it gets mashed.
7. Add bottle gourd pieces and mix well, cook for 2 minutes.
8. Add mashed dal, 1-2 cups of water, salt and bring it to good boil, simmer for 5 minutes. Add coriander leaves mix and off flame.
Serve with steamed rice, salad, pickle and any side dish. Add ghee in dal for extra flavor.
