I love pesto you can see that in my spinach pesto, roasted beets pesto recipes since it's difficult to find basil here so I buy some times basil pesto but store basil pesto can be bitter in taste few times and it's spoils the whole pasta anyways basil pesto is not we going to talk about today.  Recipe of the day is Broccoli Pesto Pasta I make broccoli pesto in a different ways but when I saw this recipe in Raks blog I knew I going to make this as it's really easy, quick and taste good.

If you are not really a fan of pesto or broccoli then you should try this recipe, it's also good to make kids eat broccoli in disguise they will hardly notice it.  Normally I don't buy penne pasta but I happened to have wheat penne on that particular day you can use any pasta variety of your choice it's works fine with all.

Mashed broccoli with walnut crunch along with hint of lemon juice & zest makes this pasta delicious pair it along a salad or soup to make it a complete meal.  I made bread pizza and cucumber lemonade for one of our weekend lunch.

You can guess from the cucumber lemonade how old these pictures are I was not able to make this post ready for some unknown reason!  But now I gather all my courage to post this recipe to share with you all.

Broccoli Pesto Pasta Recipe

Ingredients:

Broccoli - 400 gms (2 Cups florets)

Pasta (I used Wheat Penne) - 500 gms (5 Cups)
Chopped Walnut - 3 tbsp
Lemon Zest - 1 tsp (or from one small lemon)
Lemon Juice - 1 tbsp
Red Chilli Flakes - 1/2 tbsp
Olive Oil - 4 tbsp
Salt & Pepper - To Taste
Pamersan Cheese - 1/4 Cup [I didn't use]

Method:
1. Wash and cut broccoli in florets and add in boiling water, boil for 6 minutes or until broccoli gets cooked, drain and keep aside.

2. In same water, add 1 tsp salt add pasta and cook as per packet instruction or until al dent, add more water if needed drain and keep aside.

3. Chop walnut and grate or scrap a lemon to get lemon zest.

4. In a bowl mash cooked broccoli add lemon zest, walnut, red chilli flakes, salt & pepper and mix well.

5. Bring back the cooked pasta to pan, add pesto, olive oil, cheese(if using), lemon juice, more pepper if required and mix well.

Serve warm with soup, I served with bread pizza and cucumber lemonade.
